Here are 3 great recipes for the warmer months ahead, courtesy of Law with Economics student, Martyna.

Chicken Salad

Prep time: 15 minutes. Cooking time: 15 minutes.

One of my all-time favourites! It’s super simple and delicious! It’s a perfect meal if your looking for something that will satisfy you, but also won’t leave you too full!

All you need is:

  • 1 chicken breast (if you don’t eat meat you can easily replace it with tofu, seitan or chickpeas)
  • 1/2 avocado
  • 1 cup of romaine salad
  • 1 cup of rucola salad
  • 1/2 cup of tomatoes
  • 1/2 cup of cucumbers
  • 1/2 cup of croutons
  • For the dressing:
  • 1/4 cup lemon juice
  • 1 teaspoon of mustard
  • 1 teaspoon of vinegar
  • 2 tablespoons of olive oil
  • Salt and pepper


  1. Grill the chicken.
  2. Prepare vegetables and place them in a bowl.
  3. Mix salad with the dressing.
  4. Add chicken on the top of the salad and enjoy!

Couscous Salad

Prep time: 15 minutes Cooking time: 15-20 minutes

This is the most simple, delicious and budget-friendly recipe! You only need the couscous, vegetables and any protein of your choice (but it’s optional!). It takes from 15 to 30 minutes to prepare it and you can always make some more, keep it in the fridge and you have your lunch for a few days! 🤓

You will need:

  • 1 cup of couscous
  • 1 tablespoon of olive oil
  • 1/4 cup lemon juice
  • Salt and pepper
  • Herbs of choice (basil, oregano, chilli, coriander)
  • Veggies of choice (cucumber, tomatoes, aubergine, eggplant, onion, whatever you have in the fridge!)
  • Protein of choice (chicken, tofu, seitan, tempeh)


  1. Prepare the couscous according to the instructions on the package – add herbs.
  2. Add oil, herbs, salt and pepper and veggies and combine it all together. My favourite combination is coriander, chilli, avocado, tomatoes and aubergines!
  3. Add your protein, I usually eat it with chicken or chickpeas.
  4. Enjoy!

Lentil Soup

Prep time: 10 minutes Cooking time: 45 minutes

If you’re looking for something warming and comforting – that is the perfect recipe! This one takes a little bit more time to prepare, but it’s definitely worth it! You can prepare some more and have it as a lunch, or dinner for a few days 😉

You will need:

  • 1 small onion (chopped)
  • 2 carrots (chopped)
  • 4 garlic cloves (minced)
  • 2 teaspoons of ground cumin
  • 1 teaspoon curry powder
  • 1 teaspoon black pepper
  • Salt
  • Chili paste
  • Coriander
  • 1/4 cup olive oil
  • 1 can of diced tomatoes
  • 1 cup of lentils


  1. Warm the pot and add olive oil, onion and garlic. Cook until the onion gets golden.
  2. Add carrots – cook until they become soft.
  3. Add all of the spices and let it simmer for 3 minutes.
  4. Add the rest of ingredients and cook for about 25/30 minutes. Pro tip: remember to not overcook the lentils, they should be tender but still hold their shape!
